Salmon With Leek And Camembert In Honey Mustard Sauce

500 g (1lb) salmon fillet, cut into thick strips
1/4 cup (60 g/2 o.z) wholegrain mustard
1 tablespoon lime juice
2 tablespoons oil
1 leek, only the white part, julienned
2 tablespoons tamari
2 teaspoons fish sauce
1 tablespoon honey
75 g (21/2 oz.) snow pea sprouts
1/2 cup (15 g/1/2 oz.) coriander leaves, extra to garnish
100 g (3 1/2 oz.) Camembert, sliced lime wedges, to serve

1. Place the salmon strips in a ceramic bowl. Add the mustard and the lime juice and toss them well to coat the salmon.

2. Heat the wok until it becomes hot, add some of the oil and swirl well it around to coat the side. Stir-fry the salmon in small batches over very high heat until it becomes slightly brown. Remove it from the wok.

3. Add 1 tablespoon of water to the wok, then add the leek and stir-fry it until it becomes kind of golden brown. Return the salmon to the wok, with the tamari, the fish sauce and the honey. Cook it until the salmon is well heated through.

4. Then remove the wok from the heat and toss the snow pea sprouts and the coriander leaves through the salmon. Serve it topped with the Camembert and the extra coriander, and with the lime wedges on the side.
