Slow-cooked Halloween Chicken - The Recipe

This delicious slow-cooked chicken dish is perfect for a Halloween or Bonfire Night party, just leave it simmering away and bring it out when your guests get hungry!

Serves: 4
Prep time: 20 mins
Cooking time: 2 hrs 30 mins
Total time: 2 hrs 50 mins


8 chicken thighs
2tsp freshly grated ginger
2 cloves of garlic chopped
45g flaked almonds
250g TOTAL Greek Yoghurt
120ml water
2 onions chopped
1 cinnamon stick
2tsp ground coriander seeds
4 cardamom pods
200g tin chickpeas in water, drained
1tsp turmeric
1tbsp chilli flakes
2tsp salt
50ml vegetable oil
1 tin green lentil


Heat the oil in a casserole dish; seal the chicken until golden brown.
Remove the chicken from the dish, and cook the spices off, starting with the cinnamon stick, cardamom pods, then the turmeric and chilli.
Reduce the heat then add the onions, garlic and ginger, cook until the onions are soft.

Place the chicken back in the dish, pour over the TOTAL Greek Yoghurt and the water season to taste.
Bake in a slow oven 140c gas mark 3 for 2 hours with a lid or sealed with tin foil.
Add the lentils and chickpeas, stir then leaving the dish uncovered return to the oven and bake for a further 20 minutes.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.

Hot Mulled Cider Punch

Serves: 6
For a warming winter tipple packed with flavour, try Joe Wadsack's sweet and spicy mulled cider punch

100 g brown sugar
1 pinches salt
2 litres cider
1 tsp ground allspice
1 tsp whole cloves
1 pinches nutmeg
2 oranges, peel only, cut into segments
6 cm cinnamon sticks
50 g blanched flaked almonds, lightly toast

1. Combine the sugar and salt, and add to the cider in a large saucepan.

2. Tie the spices in cheesecloth and add to the cider. Slowly bring to the boil. Cover and simmer for 20 minutes.
3. Remove the spices and add the orange peel, cinnamon stick and toasted almonds before serving in a punch bowl.
