Muffins are quite tasty, so it’s no wonder that the muffin man was popular enough to have a song made up about him – but most muffins are also be packed with sugar and fat. Instead of picking up a bakery muffin on your way to work, give these recipes a try – they all incorporate heart-healthy cereal grains. And with cereal coupons, these recipes will be as kind to your wallet as they are to your waistline.

ORANGE-CRANBERRY MUFFINS – these muffins are sweetened with juice and contain berries, with pack flavor and fiber.
1 ½ cups all purpose flour
¼ cup sugar or Splenda
1 tablespoon baking powder
3 cups Kellogg’s All Bran Complete wheat flake cereal
1 ¼ cups orange juice
¼ cup vegetable oil
1 large egg
2/3 cup dried cranberries
1 teaspoon orange zest
Directions:
Preheat oven to 400 degrees F. Line a 12-cup muffin pan with muffin liners or spray with nonstick cooking spray.

In a large bowl, combine cereal with orange juice, oil, and egg. Let stand for 5 minutes to soften cereal. Stir in dried cranberries and orange zest.
In a medium bowl, combine flour, sugar, and baking powder.
Add dry ingredients to cereal mixture and bake for 15-19 minutes, or until a toothpick inserted in the center comes out clean. Serve warm.
APPLE BERRY MUFFINS – these muffins are sweetened with wholesome applesauce, which makes them moist and delicious for breakfast or as an afternoon snack.
• 1 1/4 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 2 teaspoons ground cinnamon
• 1/4 teaspoon baking soda
• 1/4 teaspoon ground nutmeg
• 1/8 teaspoon salt
• 1 1/2 cups Kellogg's All-Bran Complete Wheat Flakes cereal, crushed to ¾ cup
• 3/4 cup applesauce, unsweetened
• 1/3 cup reduced-fat or fat-free milk
• 1/4 cup egg whites
• 1/2 cup packed brown sugar
• 2 tablespoons vegetable oil
• 1/2 cup dried mixed fruit, such as cranberries or blueberries
• ½ cup chopped walnuts, if desired

Preheat oven to 375 degrees F. Line a 12-cup muffin pan with muffin liners or spray with nonstick cooking spray.
In a large bowl, combine cereal, applesauce, egg whites and milk. Mix and let stand for 2 minutes minimum. When the cereal has softened, add brown sugar and vegetable oil. Mix well.
In a medium bowl, combine flour, baking powder, spices and salt.
Gradually add flour mixture to cereal mixture and stir just until combined. Fold in fruit and nuts. Divide into muffin cups.
Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean. Remove from pan to cool. These muffins are delicious hot or cold.
