The founder of the Gluten Free Expo 2009 (http://glutenfreeclasses.com), Jen Cafferty, has had her own battles with the problem of eating healthy and nutritionally. It was due to these trials that she was forced to learn the ropes of a gluten-free lifestyle. Now, she wants to share her knowledge and the combined knowledge of others to those who want, or need, this information.

In a recent interview with Jen, I discovered that it was because of here daughter that Jen first opened her eyes to the world of celiac disease and a gluten-free lifestyle. This lifestyle change finally answered the mysteries of troubles that not only plagued her daughter but herself as well for too many years. The culprit was gluten. Simply stated gluten is a mixture of proteins found in a number of grains and (eaten by millions) primarily in the innocent grain, wheat.

One of the concern with a gluten-free family is how to furnish the proper nutrients for children to grow healthy and strong and to feel good and energetic. Once you embark on a diet free of gluten, reading label and learning how to prepare and cook food is important. This ensures that everyone gets the proper nutrition needed to be and feel healthy.

Jen Cafferty single handedly reached out and decided to help others with similar problems by establishing her own cooking school and founding the Gluten Free Expo. Now in it's third year, this Expo is different from others in this field. The Gluten Free Expo is more a nutritional approach, a need she felt was missing. This year, the Gluten Free Expo 2009 will be held at the Windham Hotel in Lisle Illinois and, according to Jen, people are already confirmed and flying in from all over, even from as far away as Canada.

Gluten Free Expo is a packed two days on August 15th and 16th and all attendees will be in for an abundance of surprises from all the dairy-free and gluten-free treats available to a full children's program. This is an event where you will be able to get important questions answered such as how to handle the picky eater, food that actually tastes good, how to really cook gluten-free and much more. All attendees will leave with a wealth of new skills and knowledge to apply.

Jen's goals for this year's Expo are to help parents with a newly diagnosed child and to teach the old-timer or newly diagnosed how to cook for oneself so that the food doesn't taste like cardboard. She has found that many long-term gluten-free families still have not mastered how to cook nutritious, gluten-free meals that taste delicious. This year's Expo promises to solve all this and much more in an enjoyable and entertaining way.
